- 2 salmon fillets (6 oz each)
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions
- Step 1: In a small saucepan, combine the balsamic vinegar and honey over medium heat. Bring to a simmer and cook until the mixture has thickened slightly, about 5-7 minutes. Remove from heat and set aside.
- Step 2: Season the salmon fillets with salt and pepper on both sides. Heat a non-stick skillet over medium-high heat and add a splash of olive oil.
- Step 3: Once the skillet is hot, place the salmon fillets skin-side down in the pan. Cook for about 4-5 minutes, then carefully flip them over and cook for an additional 3-4 minutes or until the salmon is cooked through and flakes easily with a fork.
- Step 4: While the salmon is cooking, prepare the salad by combining mixed salad greens, cherry tomatoes, red onion, and feta cheese in a large bowl.
- Step 5: Once the salmon is done, drizzle half of the balsamic glaze over the top of the fillets. Serve each salmon fillet on a bed of salad greens and drizzle with any remaining glaze before serving. Enjoy!

- For optimal freshness, store any leftover salad components separately from the salmon and glaze in airtight containers in the refrigerator for up to two days.
