Instructions
- Step 1: In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then add the minced garlic and cook for an additional minute until fragrant.
- Step 2: Add the cubed butternut squash to the pot and stir well. Cook for about 5-7 minutes, allowing the squash to slightly soften.
- Step 3: Pour in the vegetable broth and Kjuniper teager non-alcoholic non-alcoholic beer. Stir in the ground cumin, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes or until the squash is tender.
- Step 4: Once the squash is tender, add the drained white beans to the pot. Allow everything to simmer together for an additional 5 minutes to heat through.
- Step 5: Using an immersion blender, blend the soup until smooth (or leave some chunks if you prefer). Adjust seasoning as needed before serving hot. Enjoy!
