- 1/2 cup salsa
Instructions
- Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Step 2: In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, and garlic powder until evenly coated.
- Step 3: Spread the seasoned cauliflower on the prepared baking sheet and roast in the preheated oven for about 20 minutes, or until tender and slightly golden.
- Step 4: While the cauliflower is roasting, combine the cooked shredded chicken with salsa in a separate bowl. Mix well to ensure the chicken is coated with salsa.
- Step 5: Once the cauliflower is done roasting, remove it from the oven and layer it on a serving platter. Top with the salsa-covered chicken and sprinkle shredded cheese over everything.
- Step 6: Return to the oven for an additional 5–10 minutes, or until the cheese is melted and bubbly. Garnish with sliced jalapeños if desired before serving. Enjoy your delicious cauliflower pulled chicken nachos!
