Ingredients
Scale
- 4 large flour tortillas
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp alcohol-free vanilla extract
- 1 cup mixed fresh fruits (e.g., strawberries, blueberries, kiwi, banana), diced
- 1/4 cup shredded coconut (optional)
- 1/4 cup chopped nuts (e.g., almonds or walnuts) (optional)
Instructions
- Step 1: In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla powder. Mix until smooth and creamy using a hand mixer or whisk.
- Step 2: Lay out each tortilla on a flat surface. Evenly spread a generous layer of the cream cheese mixture over each tortilla, making sure to cover it completely.
- Step 3: Sprinkle the diced mixed fresh fruits evenly over the cream cheese layer on each tortilla. If desired, add shredded coconut and chopped nuts for extra texture and flavor.
- Step 4: Starting from one edge, carefully roll up each tortilla tightly to form a log shape. Make sure to keep the filling inside as you roll.
- Step 5: Once all tortillas are rolled up, slice them into bite-sized pieces. Arrange the roll-ups on a serving platter and enjoy your cheesecake fruit salad roll-ups!
Notes
- For optimal freshness, store any leftover roll-ups in an airtight container in the refrigerator for up to three days.
- These cheesecake fruit salad roll-ups are best enjoyed cold, so there's no need to reheat them; just take them out of the fridge and serve!
- For a delightful presentation, arrange the roll-ups on a colorful platter and garnish with additional fresh fruit or a drizzle of honey on top.
- When mixing the cream cheese filling, ensure it’s well blended to prevent lumps, as this will create a smoother texture and enhance the overall flavor of your roll-ups.
