Instructions

  1. Step 1: Preheat your oven to 400°F (200°C). Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Step 2: Place the squash halves cut side down on a baking sheet lined with parchment paper. Bake in the preheated oven for about 30-40 minutes, or until the flesh is tender and easily shreds with a fork.
  3. Step 3: While the squash is baking, in a large bowl, combine the shredded chicken, enchilada sauce, black beans, corn, chili powder, and cumin. Mix well until all ingredients are evenly coated.
