Instructions
- Step 1: In a cocktail shaker, muddle the fresh mint leaves gently to release their oils, being careful not to tear them too much.
- Step 2: Add the coconut pineapple juice with almond extract, fresh lime juice, simple syrup, coconut water, and pineapple juice to the shaker with the muddled mint.
- Step 3: Fill the shaker with ice and shake vigorously for about 15 seconds until well chilled.
- Step 4: Strain the mixture into a tall glass filled with ice.
- Step 5: Top off the drink with club soda for a refreshing fizz and stir gently to combine.
