Ingredients
Scale
- 4 medium zucchinis, spiralized into zoodles
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 cup shredded Gruyère cheese
- 1 cup beef or vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Step 1: Preheat your oven to 375°F (190°C) and prepare a baking dish by greasing it lightly with cooking spray or olive oil.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they become caramelized and golden brown, about 20-25 minutes.
- Step 3: Once the onions are caramelized, stir in the thyme, salt, and pepper. Pour in the broth and allow it to simmer for about 5 minutes to reduce slightly.
- Step 4: In a large mixing bowl, combine the spiralized zoodles with half of the Gruyère cheese. Mix well to ensure the cheese is evenly distributed among the zoodles.
- Step 5: Layer half of the zoodle mixture at the bottom of the prepared baking dish. Top with half of the caramelized onion mixture, then repeat with the remaining zoodles and onions. Finish by sprinkling the top with Parmesan cheese and the remaining Gruyère.
- Step 6: Bake in the preheated oven for about 25-30 minutes or until the cheese is bubbly and golden brown. Let it cool for a few minutes before serving. Enjoy your French Onion Zoodle Bake!
Notes
- For optimal freshness, store leftover French Onion Zoodle Bake in an airtight container in the refrigerator for up to 3 days.
- When reheating, do so gently in the oven at 350°F (175°C) until warmed through, as this helps maintain the texture of the zoodles and prevents them from becoming mushy.
- Serve your French Onion Zoodle Bake with a side of crusty bread or a fresh green salad for a delightful contrast in textures and flavors.
- For added depth of flavor, consider sautéing the onions with a splash of balsamic vinegar during caramelization to enhance their sweetness and complexity.
