Ingredients
Scale
- 1 sheet of puff pastry (thawed)
- 1 cup cherry tomatoes (halved)
- 4 oz goat cheese (crumbled)
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- Salt and pepper to taste
- 1 egg (beaten, for egg wash)
- Balsamic glaze (for drizzling, optional)
Instructions
- Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Step 2: On a lightly floured surface, roll out the puff pastry sheet to smooth out creases and cut it into squares or circles that fit your tartlet pan.
- Step 3: Place the pastry pieces into the tartlet pan and prick the bottoms with a fork to prevent them from puffing up too much during baking.
- Step 4: In a bowl, toss the halved cherry tomatoes with olive oil, thyme, salt, and pepper until evenly coated. Distribute the mixture over the puff pastry bases.
- Step 5: Sprinkle crumbled goat cheese on top of the tomatoes and brush the edges of the pastry with beaten egg for a golden finish.
- Step 6: Bake in the preheated oven for about 20-25 minutes or until the pastry is puffed and golden brown. Drizzle with balsamic glaze before serving if desired.
Notes
- For optimal storage, keep any leftover tartlets in an airtight container in the refrigerator for up to 2 days to maintain their freshness and flavor.
- To reheat, simply place the tartlets in a preheated oven at 350°F (175°C) for about 10 minutes, allowing them to regain their crispiness without becoming soggy.
- Serve these delightful tartlets warm as an elegant appetizer, or pair them with a fresh salad for a light lunch that will impress your guests.
- For a flavor boost, consider adding a pinch of red pepper flakes to the tomato and olive oil mixture before roasting, enhancing the overall taste with a subtle kick.
