  • 1 teaspoon vanilla bean paste

Instructions

  1. Step 1: In a large mixing bowl, combine the rolled oats, almond milk, chia seeds, honey or maple syrup (if using), and a pinch of salt. Stir well to ensure all ingredients are combined.
  2. Step 2: Cover the bowl with a lid or plastic wrap and place it in the refrigerator overnight (or for at least 4 hours) to allow the oats to soak and thicken.
  3. Step 3: While the oats are soaking, prepare the cherry chia seed jam. In a small saucepan over medium heat, combine the cherries, lemon juice, and a splash of water. Cook until the cherries begin to soften and release their juices, about 5 minutes.
  4. Step 4: Remove the saucepan from heat and stir in the chia seeds. Allow the mixture to cool slightly; it will thicken as it sits. If desired, mash some of the cherries for a smoother consistency.
