- 1 cup sushi rice
- 1 1/4 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon olive oil
- 1/2 cup cherry tomatoes, halved
- 1/2 cup fresh mozzarella balls, halved
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Step 1: Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a saucepan and bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the water is absorbed.
- Step 2: While the rice is cooking, in a small bowl, mix together the rice vinegar and olive oil. Once the rice is done, remove it from heat and let it cool for a few minutes before gently stirring in the vinegar mixture. Allow the rice to cool completely.
- Step 3: On a clean surface or bamboo sushi mat, spread out a sheet of plastic wrap. Place a layer of cooled sushi rice on top of the plastic wrap, pressing down to form an even rectangle.
- Step 4: In the center of the rice rectangle, evenly distribute halved cherry tomatoes, mozzarella balls, and chopped basil. Season with salt and pepper to taste.
- Step 5: Carefully lift the edge of the plastic wrap closest to you and start rolling it away from you to create a tight log. Use your hands to shape it as you go. Once rolled, slice into bite-sized pieces with a sharp knife and serve immediately. Enjoy your Italian sushi!
