Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon olive oil
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup fresh mozzarella balls, halved
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Step 1: Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a saucepan and bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the water is absorbed.
  2. Step 2: While the rice is cooking, in a small bowl, mix together the rice vinegar and olive oil. Once the rice is done, remove it from heat and let it cool for a few minutes before gently stirring in the vinegar mixture. Allow the rice to cool completely.
  3. Step 3: On a clean surface or bamboo sushi mat, spread out a sheet of plastic wrap. Place a layer of cooled sushi rice on top of the plastic wrap, pressing down to form an even rectangle.
  4. Step 4: In the center of the rice rectangle, evenly distribute halved cherry tomatoes, mozzarella balls, and chopped basil. Season with salt and pepper to taste.
  5. Step 5: Carefully lift the edge of the plastic wrap closest to you and start rolling it away from you to create a tight log. Use your hands to shape it as you go. Once rolled, slice into bite-sized pieces with a sharp knife and serve immediately. Enjoy your Italian sushi!
