Ingredients
Scale
- 1 medium spaghetti squash
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled cooked turkey bacon
- 2 jalapeños, diced (seeds removed for less heat)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Step 1: Preheat your oven to 400°F (200°C) and carefully cut the spaghetti squash in half lengthwise. Scoop out the seeds and place the halves cut-side down on a baking sheet lined with parchment paper.
- Step 2: Roast the spaghetti squash in the preheated oven for about 30-40 minutes, or until the flesh is tender and can be easily scraped into strands with a fork.
- Step 3: While the squash is roasting, cook the beef bacon in a skillet over medium heat until crispy. Remove from heat, crumble it, and set aside.
- Step 4: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled turkey bacon, diced jalapeños, garlic powder, salt, and pepper. Mix until well combined.
- Step 5: Once the spaghetti squash is done roasting, remove it from the oven and let it cool slightly. Use a fork to scrape out the flesh into strands and add it to the cheese mixture. Stir to combine everything evenly.
- Step 6: Transfer the mixture back into the spaghetti squash halves. Return them to the oven and bake for an additional 10-15 minutes until heated through and the cheese is melted and bubbly. Garnish with fresh cilantro if desired before serving. Enjoy!
Notes
- For storage, keep any leftovers in an airtight container in the refrigerator for up to three days to maintain freshness.
- When reheating, pop the spaghetti squash in the microwave for quick warming, but if you prefer a crispy top, reheat it in the oven at 350°F (175°C) for about 10 minutes.
- Serve your Jalapeño Popper Spaghetti Squash with a sprinkle of extra cheese on top and a side of tortilla chips for a fun, crunchy contrast.
- For a flavor boost, feel free to experiment with different types of cheese or add spices like smoked paprika to enhance the dish's smoky profile!
