Ingredients
Scale
- 1 pound ground beef or turkey
- 2 tablespoons jerk seasoning
- 1/2 cup breadcrumbs
- 1 large egg
- 1 can (14 ounces) coconut milk
- 2 tablespoons curry powder
- 1 medium onion, diced
- 2 cloves garlic, minced
Instructions
- Step 1: In a large bowl, combine the ground beef or turkey with jerk seasoning, breadcrumbs, and the egg. Mix until well combined and form into meatballs about 1 inch in diameter.
- Step 2: Heat a large skillet over medium heat and add a bit of oil. Cook the meatballs for about 6-8 minutes, turning occasionally until they are browned on all sides. Remove them from the skillet and set aside.
- Step 3: In the same skillet, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.
- Step 4: Stir in the curry powder and cook for an additional minute before adding the coconut milk. Bring the mixture to a gentle simmer.
- Step 5: Return the meatballs to the skillet, cover, and let them simmer in the coconut curry sauce for about 15 minutes until cooked through and heated thoroughly.
- Step 6: Serve hot over rice or with naan bread, garnished with fresh cilantro if desired. Enjoy your Jerk Meatballs in Coconut Curry Sauce!
Notes
- For optimal freshness, store any leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
- When reheating, gently warm the meatballs and sauce on the stovetop over low heat to maintain their texture and flavor, adding a splash of coconut milk if needed to loosen the sauce.
- Serve your jerk meatballs over fluffy rice or alongside warm naan bread, and don’t forget to sprinkle fresh cilantro on top for a vibrant touch!
- For an extra flavor boost, consider adding some chopped bell peppers or spinach to the curry sauce while it simmers; they'll add both color and nutrition to your dish.
