Ingredients
Scale
- 1 pound carrots, peeled and cut into sticks
- 2 medium apples, cored and sliced
- 3 tablespoons maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme leaves (optional)
Instructions
- Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
- Step 2: In a large mixing bowl, combine the maple syrup, Dijon mustard, olive oil, salt, and black pepper. Whisk until well blended.
- Step 3: Add the carrot sticks and apple slices to the bowl and toss them in the maple-Dijon mixture until they are evenly coated.
- Step 4: Spread the coated carrots and apples in a single layer on the prepared baking sheet. If using, sprinkle fresh thyme leaves over the top for added flavor.
- Step 5: Roast in the preheated oven for about 25-30 minutes or until the vegetables are tender and caramelized, stirring halfway through to ensure even cooking.
- Step 6: Remove from the oven and serve warm as a delicious side dish!
Notes
- For optimal freshness, store any leftover Maple Dijon Roasted Carrots and Apples in an airtight container in the refrigerator for up to three days. When reheating, simply warm them in the oven at 350°F (175°C) for about 10-15 minutes to restore their delicious caramelization. These roasted veggies make a fantastic side dish alongside grilled meats or can be served over a bed of greens for a tasty salad. For an extra depth of flavor, consider adding a sprinkle of crushed walnuts or pecans before serving; they pair wonderfully with the sweetness of the maple and the tang of the Dijon.
