Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 cup peanut butter
- 1 teaspoon vanilla bean paste
- 1 cup heavy whipping cream
- ½ cup grape or strawberry jelly
Instructions
- Step 1: Preheat your oven to 325°F (165°C). In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Step 2: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the powdered sugar, peanut butter, and vanilla bean paste, mixing until fully combined and smooth.
- Step 3: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until well incorporated.
- Step 4: Pour half of the peanut butter cheesecake filling over the prepared crust in the springform pan. Spread it evenly with a spatula. Then, spoon dollops of jelly on top of the filling and use a knife to swirl it gently.
- Step 5: Add the remaining peanut butter cheesecake filling over the jelly layer and smooth it out. Optionally, swirl in more jelly on top for decoration. Bake in the preheated oven for about 50 minutes or until set. Allow to cool completely before refrigerating for at least four hours or overnight before serving.
Notes
- For best results, store your Peanut Butter & Jelly Cheesecake in the refrigerator, covered tightly with plastic wrap or in an airtight container, where it will keep for up to five days.
- If you're looking to enjoy a slice warm, gently reheat individual portions in the microwave for about 15-20 seconds; just be careful not to overdo it, as the texture is best enjoyed chilled.
- For an extra touch, serve each slice with a dollop of whipped cream and a drizzle of extra jelly on top for added flavor and visual appeal.
- When mixing the cream cheese and peanut butter, ensure both are at room temperature for a smoother blend, and consider using natural peanut butter for a richer taste without added sugars.
