Transform your dinner with this Pumpkin Lasagna, blending creamy ricotta and savory pumpkin puree. A comforting dish that’s easy to prepare, complete with detailed instructions and nutrition info!

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 cups pumpkin puree
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 3 cups shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C) and cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  2. Step 2: In a mixing bowl, combine the pumpkin puree, ricotta cheese, dried oregano, salt, and black pepper. Mix well until all ingredients are thoroughly blended.
  3. Step 3: Spread a thin layer of the pumpkin mixture on the bottom of a baking dish to prevent sticking. Place three lasagna noodles over the sauce in a single layer.
  4. Step 4: Add half of the remaining pumpkin mixture over the noodles, followed by a layer of mozzarella cheese and a sprinkle of Parmesan cheese. Repeat this layering process with another set of noodles, pumpkin mixture, and cheeses.
  5. Step 5: Top with the final three lasagna noodles, remaining pumpkin mixture, and finish with mozzarella and Parmesan cheese on top. Cover the dish with aluminum foil and bake for 25 minutes.
  6. Step 6: Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden brown. Let it cool for a few minutes before slicing and serving. Enjoy!

Notes

  • For optimal freshness, store any leftover pumpkin lasagna in an airtight container in the refrigerator for up to three days, or freeze it for up to two months.
  • When reheating, cover the lasagna with foil to prevent it from drying out, and warm it in a 350°F (175°C) oven until heated through, about 20-25 minutes.
  • Serve your pumpkin lasagna with a simple side salad and a drizzle of balsamic glaze for a delicious contrast that enhances the flavors.
  • For added depth, consider mixing fresh herbs like sage or thyme into the pumpkin mixture; they pair wonderfully with the sweetness of the pumpkin.
