- 1 medium spaghetti squash
- 2 cups cooked chicken, shredded
- 2 cups fresh spinach

Instructions
- Step 1: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut-side down on a baking sheet and roast for about 30-40 minutes, until tender.
- Step 2: While the squash is roasting, heat a large skillet over medium heat. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside.
- Step 3: Once the spaghetti squash is done, use a fork to scrape the flesh into spaghetti-like strands. In a large bowl, combine the spaghetti squash strands, cooked chicken, sautéed spinach, Alfredo sauce, garlic powder, salt, and pepper. Mix well.
- Step 4: Transfer the mixture into a greased baking dish. Sprinkle shredded mozzarella cheese and grated Parmesan cheese evenly on top.
