Indulge in the wholesome flavors of Spaghetti Squash Pizza Casserole :: primal, low-carb! This hearty dish features tender squash, savory meats, and melty cheeses, baked to perfection.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 medium spaghetti squash
  • 1 lb ground beef or Italian sausage
  • 1 cup marinara sauce (preferably sugar-free)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Step 1: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut-side down on a baking sheet and bake for about 30-40 minutes, or until tender.
  2. Step 2: While the squash is baking, heat a large skillet over medium heat. Add the ground beef or Italian sausage, breaking it up with a spatula. Cook until browned and fully cooked through. Drain excess fat if necessary.
  3. Step 3: Once the meat is cooked, stir in the marinara sauce and Italian seasoning. Allow the mixture to simmer for about 5 minutes, then season with salt and pepper to taste.
  4. Step 4: When the spaghetti squash is done baking, remove it from the oven and let it cool slightly. Use a fork to scrape out the flesh into strands and place them in a large mixing bowl.
  5. Step 5: Combine the spaghetti squash strands with the meat mixture, mixing until well combined. Transfer this mixture to a greased casserole dish. Top with shredded mozzarella cheese and grated Parmesan cheese.
  6. Step 6: Return the casserole to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly. Remove from oven, let cool slightly, then garnish with fresh basil leaves before serving.

Notes

  • For optimal storage, keep any leftovers in an airtight container in the refrigerator for up to 4 days, or freeze portions for longer-lasting enjoyment.
  • When reheating, warm individual servings in the microwave for about 1-2 minutes, or reheat the entire casserole in a preheated oven at 350°F (175°C) until heated through, ensuring the cheese stays gooey and delicious.
  • Serve this casserole with a side salad or some roasted vegetables to add freshness and balance to your meal, making it perfect for a family dinner or gathering.
  • For extra flavor, consider adding chopped bell peppers or mushrooms to the meat mixture during cooking; it not only enhances the taste but also boosts the veggie content of your dish.
