Ingredients

  • 1 cup quinoa, rinsed

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 2 tablespoons lemon juice

Instructions

  1. Step 1: Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet and roast for about 45-60 minutes, or until they are tender.
  2. Step 2: While the sweet potatoes are roasting, prepare the quinoa. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed.
  3. Step 3: Once the quinoa is cooked, fluff it with a fork and transfer it to a large mixing bowl. Add in the cherry tomatoes, cucumber, red onion, Kalamata olives, and lemon juice. Stir well to combine all the ingredients.
  4. Step 4: When the sweet potatoes are done roasting, remove them from the oven and let them cool slightly. Carefully slice each potato down the center and gently mash the insides with a fork.
