Ingredients
Scale
- 2 medium zucchinis, sliced into half-moons
- 1 cup sun-dried tomatoes, chopped
- 6 slices turkey beef beef bacon (de dinde), diced
- 1 cup crispy fried onions
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Step 1: In a large skillet, heat the olive oil over medium heat. Add the diced turkey beef turkey bacon and cook until crispy, about 5-7 minutes. Remove the turkey bacon from the skillet and set it aside on a paper towel to drain excess grease.
- Step 2: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sliced zucchinis and cook for about 3-4 minutes until they begin to soften.
- Step 3: Stir in the chopped sun-dried tomatoes and cooked turkey beef beef bacon. Season with salt and pepper to taste. Continue to cook for another 3-5 minutes until the zucchinis are tender but still slightly crisp.
- Step 4: Remove the skillet from heat and gently fold in the crispy fried onions, reserving a handful for garnish.
- Step 5: Transfer the mixture to a serving dish and garnish with additional crispy onions and fresh basil if desired. Serve warm as a delicious side dish or light main course. Enjoy!
Notes
- For optimal freshness, store any leftovers in an airtight container in the refrigerator for up to 3 days, making sure to separate the crispy onions to maintain their crunch.
- When reheating, use a skillet over low heat to gently warm the dish while avoiding sogginess; add a splash of olive oil if needed to revitalize flavors.
- This zucchini dish pairs beautifully with grilled chicken or fish, and can also serve as a vibrant topping for toasted bread or a fresh salad base.
- For extra flavor depth, consider adding a splash of balsamic vinegar or a sprinkle of red pepper flakes when cooking the zucchini and sun-dried tomatoes.
